“Egg Pie” with Avocado, Mozzarella, Bacon, Potatoes and Cilantro Cream Sauce
My roommate Saewitz wanted to surprise his buddy Moruf, an incredibly talented rap artist who is currently finishing up his first mix tape, with a little adventure this morning. Moruf had never been to a beach before!, never felt the soft sand on his feet nor the salty stinging water in his eyes, and so Saewitz thought it would be a great idea to wake up around 5am and head to Coney Island to do some filming for a video they are putting together for his upcoming mix tape. It was all a surprise which made it all the better.
We got a grill together, brought a few cooking supplies, breakfast type foods to cook, and headed to Coney Island with cameras and my guitar to get rolling. My brother and Saewitz had bought these rolls to make breakfast sandwiches on that looked extra delicious. At first I was a little weary of buying rolls but then I remembered that all are welcome in my life. The rolls were shiny, soft and fresh as can be. It was a little rainy this morning but that did not stop us from getting the “full” beach experience in November, as full as we could get at this time of year.
When we pulled up to Coney Island we weren’t exactly sure whether or not we could grill, let alone go on the beach so early, but we went for it anyway. At one point a cop drove by but he just as quickly headed out. There were some interesting people walking and running up and down the beach which made our little cooking adventure all the more interesting. After we did a little jamming and freestyles during a cloudy sunrise we opened the bag with all the food and started preparing the charcoal for the grill. “Mike, where did you put those beautiful rolls?”
“Oh shit. Woops…” Looks like we won’t be using rolls. With no forks, no plates, nothing, how is a man supposed to eat eggs, cheese, avocado, potatoes, and bacon? Like this:
Which brings me to an idea that I have been pondering for some time now. What are mistakes? What happens when things go wrong, when we forget something, get hurt, mess up, loose something important, and so forth? Are they bad? Should we be upset? What is really going on here?
I used to view “mistakes” as a bad thing. In the past I would have seen this forgotten rolls situation as a fuck up and would have been annoyed that it happened. Maybe I would have given my bro some shit and maybe he would have argued back about how it was somehow my fault that he forgot the rolls because I told him to put them in the fridge to stay fresh. But not anymore. Now they are not mistakes in my mind, now they are reasons to try something new, to break out of some past comfort zone that may have been holding me back.
You see, there is an interesting thing to life that can be so easily missed. We have the ability to control situations that we may think are out of our immediate control. Something goes wrong and we assume the worst, but how do we know that that “issue” is not only a bridge that will lead us to something far more amazing? All it takes is a change in your perspective, a small shift of how you interpret the situation. We ended up making something far more interesting than we would have had we remembered to bring the rolls and I am all the more happy for this little miff. We made, as per Maroof’s naming, an “egg pie,” which would commonly be called a frittata, and it was one of the best breakfasts that I have ever had.
Next time something goes “wrong” in your life, take a moment to see how it might be exactly right. Sure you can sit around and be upset if you’d prefer that, but then you are submitting to the external and losing all control of a perfectly good situation.

Frittata Recipe
Ingredients: 8 eggs, cheese of your choice, salt, pepper, bacon, cubed potatoes, and whatever else you’d like to add. Anything that you have in the fridge that might work well with this I suggest you try tossing in. This is one of the easier and more delicious things that you can make for someone. It works great with leftovers
-Preheat oven to broil or if using a grill just wait until every other step is done and cover the grill with the top.
-In a bowl, using a fork, scramble together eggs, some cheese, pepper, and salt. Heat 12-inch non-stick, oven safe saute pan, over medium high heat. Add butter, or oil, to pan and melt. Add bacon, cook and take out, leaving excess bacon fat in the pan. Fry some potatoes up that are cut in small cubes in the bacon fat until nice and crispy, adding salt and pepper as you go. Pour egg mixture into pan and stir with rubber spatula. Stir in bacon, cheese and potatoes plus whatever else you’d like, it can really be anything at all.Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top.
-Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy. Remove from pan, add sliced avocado and sauce of your liking to the top, let it cool, take a minute to feel cool because you are cool, and then enjoy with some friends. If using a grill cover the grill with the top and let it cook until done, makes for a delicious crispy bottom. Enjoy yourself.
